Ed has spent his early years in Cardiff's hospitality scene working in the Infamous late night cocktail bar Ten Mill Lane where he honed his skills smashing out thousands of fun and accessible cocktails. After winning multiple local cocktail competitions and garnishing his 5,000th chelsea rose he followed his love of Rum and tropical drinks to help bring Trader's bar in Llandaff to life. During his time at Traders Ed not only developed award winning cocktails but also made his mark by becoming a welcoming and friendly face to regulars in both Llandaff and central Cardiff, to this day he is still famed for his hospitality and ability to ensure every person through the door has the best time possible.
After Traders Ed joined the award winning team at the legendary cocktail bar The Dead Canary to follow his passion of ridiculously high ester Rum, Theatrical cocktails and exceptional hospitality.
Ed currently spends his time entertaining his guests via zoom on Roughnecks virtual cocktail parties, cooking BBQ, Playing way too much warzone and working alongside Fitz at The Dead Canary.
Fitz has worked in the Cardiff hospitality scene for over 10 years bringing a creative flair from his artistic background to theatrical drinks and venues. Fitz found his passion for tropical cocktails and extravagant serves working at Tiger Tiger's Kanaloa Tiki bar learning from the best about showmanship, finely crafted in-house ingredients and Rum... Lots of Rum.
After Kanaloa Fitz turned his hand to developing bar concepts and training bartenders at several Cardiff Venues starting with Ten Mill Lane where he met his partner in crime Ed. Over the years Fitz has developed bar concepts for Ten Mill Lane, 29 Park Place, The Dead Canary, The Flora, Handsome Jacks and Fly By Night all the while working in each venue developing cocktail menus and training the team. Most recently Fitz has returned to his roots at The Dead Canary working alongside some of the best bartenders in the UK.
Fitz has won and competed in several local and regional cocktail competitions and has been lucky enough to visit bars and distilleries all over the world whilst following his passion.
Fitz currently spends his time coming up with new ways to make cocktails with guests at home with Roughnecks, Playing way too much Warzone with Ed and drinking Pinot Noir.
